1 (1 lb) beef tenderloin
2 tsp Worcestershire sauce
1 medium-size green bell pepper, cut into 20 squares
10 cherry tomatoes
10 small mushrooms
2 small yellow squash, cut into 10 slices
1/8 tsp black pepper
¼ tsp salt
Preheat the grill. Coat the grill with olive-oil cooking spray.
Cut meat into 20 (3/4-inch) cubes. Sprinkle Worcestershire sauce over meat.
Place meat, bell peppers, tomatoes, mushrooms, and squash onto 5 (12-inch) skewers (placing one ingredient after the other). Sprinkle evenly with black pepper. Place kebabs on grill.
Grill for 10 minutes (uncovered) or until desired degree of cooking. Turn the kebabs once.
If desired, sprinkle evenly with salt.
Makes 5 servings
Tip: If using wooden skewers, be sure to soak them in water 30 minutes before placing food to keep them from burning during grilling.
